Though its cousin the gin Rickey is more common now a day, this classic cocktail recipe can also be made with Bourbon as we are going to do.

• 45ml Bourbon
• 15ml Lime
• 2 slices dehydrated lime
• Top up sparkling water

1. Fill a tumbler glass with cracked ice
2. Squeeze the half lime into the glass
3. Finish with Bourbon and fill with sparkling water
4. Stir briefly to combine
5. Add two pieces of dehydrated lime
